Vegetarian nachos

I have made nachos a few times, but I think this is my favourite version. I make it with baked beans and vegetables. I know it probably sounds a bit weird but its very tasty and quick to make.


1 packet of Nachos (I used the gluten free option)

1 tin of baked beans

6 chopped mushrooms

1 courgette sliced

1/2 green capsicum/pepper chopped

1 small red onion chopped

1 chopped tomato

Cheddar cheese or any other cheese you prefer

1/2 teaspoon dry origanum

1 clove crushed garlic

1/2 red chilli

1/4 teaspoon salt

Finely chopped lettuce


Baked beans:

Fry the onion in little olive oil.

Add the vegetables and fry until soft.

Add the origanum and garlic.

Fry for a few minutes on a low heat ensuring you don't burn the garlic.

Add the baked beans, salt and chilli.

Let it cook for a few minutes on a low heat.

Put that aside.

On the baking dish:

Add nachos to the baking dish.

Add the baked beans and grated cheese.

Don't worry if the sauce from the beans goes all over the dish.

Grill at 180 degrees for 10 -15 minutes until the cheese has melted.

Add rest of your fresh toppings.


Lettuce finely chopped

Red onion and tomato cubed (add a tablespoon of lemon juice)


Sour cream


* You can use black beans in this recipe.

* I didn't have sour cream so I used greek yogurt.

* You don't have to add some of the ingredients, I wanted to add vegetables and beans so that we had a bit of protein and carbs.
