How I love potatoes made in any way, especially when you roast them with fresh and dry herbs.
10 baby potatoes or more
Olive oil enough to coat the potatoes
1 teaspoon of dry herbs eg garlic, origanum
Half cup of flat parsley chopped or 2 sprigs of rosemary (parsley, rosemary)
1/2 teaspoon of salt
1 tablespoon of butter (optional)
Pot of boiling water with 1/2 teaspoon salt
Boil water in a kettle.
Add the water into a pot and the salt, add your potatoes.
Boil for 15 - 20 minutes until soft.
Drain them, keep the potatoes drained until dry.
Put them on a baking tray.
Add olive oil, salt, fresh herbs, butter and coat well.
Fan bake or grill at 200degrees for 30-35 minutes depending how crispy you want it.
Add chopped parsley on the top. (optional)
Delicious as a side dish
In this recipe I did what Jamie Oliver does with his roasted potatoes and used a masher to slightly break them before roasting them.
