I'm becoming a big fan of quinoa. My friend always talks about it and I thought let me try cooking it, its easy to cook and if you looking for something nutritious, this is it :)
1 cup Quinoa
7-8 white or brown mushrooms chopped up
1 punnet broccoli chopped up
Dry herbs eg garlic, origanum, thyme (I used Woolworths South African brand in this recipe)
Olive oil or coconut oil
Fresh herbs eg coriander, flat parsley (optional)
Juice of half lemon (optional)
Soak the quinoa the night before or a for a few hours. (I find this makes the quinoa more fluffy)
After soaking it, rinse the water out a 2-3 times.
Add 2 cups of water and cook until the water burns out, 15 - 20 minutes on a medium heat.
In a pan:
Add coconut oil or olive oil.
On medium heat, add the mushrooms, fry for 2-3 minutes stirring continuously.
Add the broccoli and herbs.
Keep stirring for about 5-10 minutes depending on how crunchy you want the broccoli.
Add the quinoa and give it a good mix.
You can add fresh chopped coriander or flat parsley if you want and add the juice of half lemon.
I have made it before with a mixed packet of vegetables eg yellow/red peppers, carrots and broccoli.
You can add grilled chicken to this and have it as a meal for dinner or lunch.
