Cauliflower rice with vegetables

We decided to start making cauliflower rice, but I decided to "zoosh" my rice with few more ingredients.


  • 1/2 fresh cauliflower cut into florets

  • 3/4 cup of frozen mixed vegetables (used peas, green beans, corn and carrots)

  • 1/4 teaspoon turmeric

  • 1/2 teaspoon cumin seeds

  • 1/2 teaspoon dry mixed herbs

  • 1/4 teaspoon salt

  • 2 tablespoons of olive oil or coconut oil

  • 1/2 squeezed lemon

  • Fresh coriander chopped up (optional)

How to get your cauliflower looking like rice:

I used the S-blade of a food processor to make the cauliflower look as fine as couscous.

I have read that you can also use a box grater if you don't have a food processor and grate on the fine setting of the grater.


  • Put your stove on a medium heat setting.

  • Add oil to the pan.

  • Add the cumin seeds, once they start splattering, add the mixed veg.

  • Give it a good stir and let it cook for 10 minutes

  • Add the cauliflower, turmeric, salt and herbs

  • Cover the pan and cook for a further 15 minutes.

  • Add the lemon juice and coriander just before serving


I find the cauliflower rice gets more fluffy when you cover with a lid when cooking.

Have a taste, if you feel it needs more salt add it on while its hot and give it a good stir
