Broccoli and Baby Potato Salad
Updated: Jul 15, 2019
I am trying to be a bit more creative with broccoli besides steaming it. I had quite a bit of baby potatoes left over and decided to use that with my broccoli.

Ingredients:
1 head broccoli chopped up
10 baby potatoes boiled
3 stalks of celery sliced
Walnuts
3 tablespoon of good quality mayonnaise mixed with 1/2 teaspoon dijon mustard
2 tablespoon of plain yogurt
Salt
Pepper
Lemon rind
Fresh chopped flat parsley
Method:
Boil potatoes till soft but still firm, for about 20 minutes depending on size, don't let it get too soft cause it will break when you cut it in half.
Fry the broccoli in little olive oil, keep firm.
Mayonnaise and plain yogurt:
In a bowl add yogurt and mayonnaise. Add the dijon mustard and give a good mix.
In a bowl:
Slice the boiled potatoes in half and add to the bowl.
Add the broccoli, celery and mayo/yogurt mix.
Give it a good mix, then add the walnuts, salt & pepper and lemon rind.
Add the parsley.
Hint:
You can add more or less mayonnaise if you want.
